Happy Eat Your Veggies Day!

Created in the middle of National fresh Fruit and Vegetables month, Eat Your Vegetables Day is here to promote a healthy diet.

Although no one really knows the origin of this annual food holiday, with summer season in full swing what could better than eating fresh produce right about now?

Aside from being low in calories, fresh vegetables are full of essential vitamins, minerals, and fiber. We should all be striving to eat at least five vegetables a day. So why not celebrate today by swapping out your junk food by trying some delicious vegetable recipes?

78375141Spicy Vegetable Dip

If you like a little spice, this dip calls for cream cheese, sour cream, garlic, sharp Cheddar cheese, green onions, Tabasco sauce, cumin and a jalapeno pepper.

Grilled Veggies Pizza

Your stomach will still get that satisfied feeling after this pizza pie! You’ll need a package of refrigerated pizza crust, Portobello mushrooms, red and yellow peppers, summer squash, zucchini, reduced-fat Alfredo sauce and smoked Mozzarella cheese!

Asparagus and Avocado Wraps

Munch on this for lunch! You’ll need asparagus spears, a ripe avocado, lime juice, garlic, long-grain white rice, plain non-fat yogurt, whole wheat tortillas, cilantro and red onion for this one.

Try to be a vegetarian… at least for the day. Yes, we know it’s going to be a challenge, but think of how great you’re going to feel afterward!
