Happy National Ice Cream Day!

Ok, we know we’re a day late, but who cares! National Ice Cream Day should be every day in our book.

This refreshing treat tends to get a bad rep because all of the sugar, but people forget that there’s usually always a way to enjoy bad-for-you foods in a healthy way. Store-bought options, often packed with saturated fat and calories, are a no-no for sure.

So why not skip the added fat and calories and opt to whip up your own, homemade treats?

We found this amazingly delicious recipe from the recipe experts at EatingWell—Toasted Coconut & Almond ice cream. Yum!

Here are a few of the ingredients you need:

  • 1 1/2 teaspoons unflavored gelatin
  • 3 cups low-fat milk, divided
  • 1 vanilla bean
  • 1/2 cup toasted coconut flakes
  • 1/2 cup chopped toasted almonds
