What you’ll need:
- 1 can chick peas-
- 2 small garlic cloves-minced
- 1/2 a small beet- diced
- 1/4 plain greek yogurt
- 2 tbsp lemon juice
- 1/4 cup chopped parsley
- 1 1/2 tbsp olive oil
How to make it:
- Toss and mash chickpeas to remove the skin from each pea.
- Blend all ingredients in a food processor until smooth.
- Serve with veggie crudites or whole wheat crisps.
