To us, there’s nothing better than a stack of warm pancakes on a Sunday morning. So instead of running over to iHop, you can now enjoy a healthier version of this breakfast staple that packs a protein punch to fuel your body through your morning routine.
Get your cake and protein fix with Barbara‘s recipe for Confetti Cake Batter Protein Pancakes!
Ingredients:
· 1 & ½ scoops of Cake Batter protein powder (Vanilla protein powder is a good substitute as well)
· ¼ cup of coconut flour
· ¼ cup whole wheat flour
· 1 tsp baking powder
· 2 stevia packets
· 1 egg
· 1 cup almond milk
· 1 tsp. rainbow sprinkles
Mix all ingredients except sprinkles until well blended. Stir in sprinkles until evenly dispersed. Heat pan or skillet and spray with PAM or another light cooking oil. Scoop batter onto pan to make 4-5 inch round pancakes. Cook about 1 min on each side – keep an eye on them! They cook fast and can burn easily.
Take pancakes off pan and enjoy with maple syrup or the sweet sprinkle cream recipe below!
Recipe makes about 7-8 pancakes.
Sprinkle Cream Ingredients:
· 1 tbsp non-fat greek yogurt
· 1 stevia packet
· 1 tbsp cake batter protein powder (Vanilla protein powder can also be used)
· A splash of almond milk
· 1 tsp of rainbow sprinkles
Blend well and pour over pancakes.
